Palm sugar agroindustry in Kolaka regency is an industry model that is simple in a form of cast sugar processing. Cast palm sugar is produced from sugar palm sap. Processing of sugar palm sap to be sugar can give value added as return over the use of production factors. Value added is a multiplier effect that occurs over an agroindustry activity. The strategic role of agroindustry that rests on an increase in value added of domestic natural resource potential is considered being able to support the nation’s competitive improvement. The objective of the research was to identify value added of sugar palm sap processing to be palm sugar and to identify factors affecting value added of palm sugar. Value added analysis used Hayami method indicated value added received by the producer from processing sugar palm sap to be sugar is Rp 695.51 per kilogram. The price of other input (coconut oil, calcium price, and firewood price) and labor wage affect significantly and negatively on value added. Meanwhile, output price affects significantly and positively. Then, sap price did not affect significantly value added.
